· 3 fresh figs
· ½ cup coconut flakes
· 1 cup raw cashews
· 1/3 cu-p maple syrup or liquid sweetener (like agave)
· 1 vanilla bean, scraped (just add the scrapings, not the pod)
· ¼ tsp salt
· 1 ½ cups water
· 5 fresh figs, mashed with a fork
Blend the first seven ingredients in your blender or food processor.
Transfer to an ice cream maker or a bowl.
If using an ice cream maker, add the mashed figs just before removing the frozen ice cream so it makes a swirl. If using a bowl and freezer, stir in the mashed figs until just swirled through, and the put the covered bowl in the freezer until it’s frozen to the right consistency.
