Scrambled Tofu (vegan)

1 pound firm tofu2 TBLSP nutritional yeast flakes¼ teaspoon turmeric¼ teaspoon salt Pepper2 TBLSPchopped parsley2 teaspoons olive oil1 cup sliced mushrooms2 TBLSP chopped green onions1 or 2 garlic cloves, mincedTamari (optional)Drain tofu and mash with fork.Stir in yeast, turmeric, salt, pepper, and parsleyHeat oil, add mushrooms, onion and garlic, sauté until soft.Add tofu, stir and cook for 2-3 minutes.Makes 1 ½ cups.Per ½ cup, 286 calories, 28 grams protein
