Alfredo Sauce for Two (vegan)

Makes 1 cup (two servings) 1/2 pound silken tofu 1/2 head of garlic, peeled (yes, really) 2 TBLSP sesame tahini 2 TBLSP shoyu or tamari soy sauce Pinch of salt 1/2 cup of water Blend all of the ingredients in a blender or food processor until smooth. Transfer to a saucepan and cook for an hour over medium-low heat, stirring occasionally. Serve warm over pasta or vegetables. Use a deeper pan than you think you need—it splashes as it boils! I serving = ½ cup. Per serving: 128.8 calories, 7.8 grams protein.
