Mug Brownie for One (vegan)
MelanieSpiller and Coloratura Consulting
2 TBLSP vegan butter, melted2 TBLSP water1/4 teaspoon vanilla extract1 dash salt2 TBLSP unsweetened cocoa powder4 TBLSP granulated sugar4 TBLSP all-purpose flour15 (or so) raisins or other dried fruit (cranberries are very nice. Sometimes I toss in candied ginger pieces, too)A small half-handful of nut pieces (macadamia, peanut, almonds, etc.)In a 12 oz. coffee mug, stir together the butter, water, vanilla, and salt. Add the cocoa powder and stir well. Add the sugar and stir well. It seems like a lot of sugar. Just trust. Add the flour and stir well.Add the fruit and nuts and mix them in. Microwave for 60 to 90 seconds. For a molten center, try 60 seconds; a uniformly done center takes 90 seconds. I like about 75 seconds best, which is half cake-half pudding. The center is slightly molten. Be careful not to overcook.Enjoy with a spoon, straight out of the mug, but give it a couple of minutes. The brownie will be very hot.If you do it in a ramekin, it will boil over the edges and make a mess, so put it on a plate in the microwave!
