Fig and Date Chutney (vegan)

¾ cup apple cider¾ cup white wine vinegar½ cup brown sugar1 Grannysmith apple, cut into ¼-inch cubes1 ½ cups dried dates, chopped3 cloves garlic, finely chopped2 teaspoons grated fresh ginger3 dried figs, cut into ¼-inch cubes½ teaspoon ground cardamom½ teaspoon kosher saltIn a large pot, combine the cider, vinegar, and brown sugar and bring to a boil, stirring until the sugar has dissolved. Reduce the heat to medium and add in the dates, apple, garlic, and ginger. Cook for 15 minutes, until most of the liquid has been absorbed. Take off the heat.Stir in the figs, cardamom, and kosher salt. Store in a tightly sealed container in the refrigerator for up to one week or in the freezer for up to one month.
