Raw Fig “Ice Cream” (vegan)

8 fresh figs, divided ½ cup coconut flakes 1 cup raw cashews 1/3 cup maple syrup or agave 1 vanilla bean scraped (just use the scrapings, not the pod) ¼ teaspoon salt 1 ½ cups water Blend the 3 of the figs and the next six ingredients (the rest of the list—so only 5 figs remain unincorporated) in your blender or food processor. Transfer to an ice cream maker or a bowl. Mash the remaining 5 figs with a fork in a small bowl. If using an ice cream maker, add the mashed figs just before removing the frozen ice cream from the machine. It will make a nice swirl. If using a simple bowl and the freezer, stir in the mashed figs until just swirled through, and then put the covered bowl into the freezer until it’s frozen to the right consistency. (Freezers are different, so I can’t estimate how long yours will take. Mine takes several hours, but it’s a pretty old and cheap freezer.)
