Scrambled Tofu (vegan)

1 pound firm tofu
2 TBLSP nutritional yeast flakes
¼ teaspoon turmeric
¼ teaspoon salt
Pepper
2 TBLSPchopped parsley
2 teaspoons olive oil
1 cup sliced mushrooms
2 TBLSP chopped green onions
1 or 2 garlic cloves, minced
Tamari (optional)
Drain tofu and mash with fork.
Stir in yeast, turmeric, salt, pepper, and parsley
Heat oil, add mushrooms, onion and garlic, sauté until soft.
Add tofu, stir and cook for 2-3 minutes.
Makes 1 ½ cups.
Per ½ cup, 286 calories, 28 grams protein
